I may be back in a house with an operable kitchen, but I still haven’t done much cooking of my own – one of the benefits of living with your parents, especially ones who eat like you do anyway!
I do have plans to do a little recipe testing later this week (anything you want to see??) and share a few new recipes with you next week and beyond. In the meantime, I thought I’d talk about some of our recent favorite recipes – ones that we keep going back to again and again when we start to talk about dinner plans.
The easy peanut sauce is perfect combined with some soba noodles and chicken (or egg) and the cacao maca smoothie is one of my favorite pick-me-ups when I’m feeling a little low. When our fridge stock is getting really low, the frittata with mixed greens is always one of our go-tos. Summer weekend mornings are made easy with the healthy banana walnut pancakes recipe and the cacao cashew granola is perfect on its own as a snack or mixed in with a little yogurt for breakfast. And when I’m craving something with a little more substance, I always make these teriyaki chicken bowls – make them super easy by using the Trader Joe’s island teriyaki sauce, which is one of my absolute favorites. And if you’re feeling particularly lazy, the spiralized carrot pasta with veggie meatballs barely contains any homemade ingredients but is still perfectly healthy and delicious!
