Although Labor Day always marks the unofficial end of summer in my book, the actual autumnal equinox is coming up on the 22nd, so it’s officially time to start thinking fall, folks. If you’re not quite ready to say goodbye to summer just yet, I’m sharing a few of my favorite recipes to get you ready for fall today on the blog and if there’s one thing that gets me excited for a new season, it’s food!
Pumpkin Chocolate Walnut Pancakes (vegan). I love a good lazy weekend brunch and these pancakes are super moist thanks to the pumpkin and easy to throw together quickly.
Egg in a Squash Hole. Jeff and I make egg in a holes for breakfast all the time and I love this seasonal twist on the classic recipe – plus, it’s low carb too!
Mini Delicata Squash Frittata. If you’re looking for a similar dish with a little more going on, this frittata is seasonal and delicious. I love using delicata squash because you don’t have to peel the skin off and it has a rich, creamy flavor.
Marbled Chocolate Pumpkin Banana Bread. This is one of my all time favorite recipes because it looks so darn pretty and tastes amazing too. Plus, it’s vegan!
Butternut Squash Soup. Butternut squash may be a pain to peel, but the end result is well worth it. I love that this recipe has no dairy added for a lighter take on this traditionally creamy soup.
Black Bean & Veggie Enchiladas. We make a lot of Mexican food and these enchiladas are perfect for when the weather cools down enough to turn the oven back on.
Creamy Potato & Cauliflower Soup. I used to be obsessed with the potato cream soup at Marie Callender’s when I was younger, so I like to think of this as the grown-up, healthier, and vegan version of that childhood fav.
Smoky Baked Chickpeas. These crunchy chickpeas make the perfect snack and use of one of my must have kitchen ingredients – smoked paprika.
Pumpkin Spice Smoothie. If you’re a PSL addict, try this breakfast smoothie version for a healthier, cheaper option.
Golden Milk Latte. And if you’re already over pumpkin, this golden milk latte is super creamy and rich tasting, perfect for cozy, cool fall mornings.
