We made it to Kansas City yesterday and are now on the road to Fort Collins, CO to see my sister and her family! Between packing and moving, we’ve been eating out a TON lately and even when you try to make healthy choices, it’s difficult to avoid feeling like you’ve eaten too much of something – carbs, fat, salt, etc. So for our road trip across country, I wanted to make sure we took an ice chest and at least eat breakfast and lunch from our own food instead of eating out for every meal. So today, I thought I’d share a few of our make ahead road trip favorites!

We also packed bread and cheese for easy sandwich making, oatmeal cups for breakfast (I’ll stir in a little almond butter to make it more filling), apples, and some sparkling water to keep us going. Hopefully it will help us avoid consuming too much restaurant food on the trip!
