Well, our kitchen is just about all packed up and we’re in eat everything that we can mode – I hate to waste food! So while I’m going to be away from the kitchen for a bit, I thought I’d share a few of my favorite summer desserts.
These recipes are so simple + easy and make use of fresh ingredients and summer’s offerings. Popsicles are especially great summer desserts (or snacks if you put the right ingredients in them!) and while I won’t be making more in this kitchen again, I know they’re something I’ll keep coming back to again and again. My parents often put their leftover morning smoothie in a popsicle mold and place in the freezer for later, which is such a great idea if you’re short on time. I never have any leftovers (I tend to eat whatever is in front of me!), but these recipes don’t take much time to prepare anyway.
There’s also a boozy popsicle option — gotta make use of the last of that sweet Virginia wine — and a peach galette recipe. Our farmer’s market starting carrying lots of local peaches last weekend and they were beyond delicious. I love galettes because of their “rustic” quality – no need for perfect crust or presentation required.
The yellow popsicle molds you see in the pictures are from IKEA and the maroon ones were from a gift box I received. I’ve seen molds everywhere this summer through from Target to WalMart to the grocery store, so they shouldn’t be hard to find.
