Happy Monday, friends!
How was your weekend? We drove up to Norfolk early Friday morning to get our biometrics done for our visa, an extra step we weren’t anticipating until we filled out the applications online. It basically just meant we had to get our fingerprints done and then we have to pick on the biometrics form once we arrive in England, but the closest immigration center was five hours away in Norfolk. We were annoyed at first but decided to turn it into a weekend getaway and got a hotel in the smaller town of Portsmouth.
Jeff was excited because they were building an aircraft carrier outside of our window and I was just excited to get out of town for a day and a half and head to the beach! The Virginia Beach area felt a lot like LA, and the beach itself was gorgeous, though crowded with lots of people swimming even at 9am. We found a hole-in-the-wall diner for breakfast (and $2.50 mimosas!) and then headed back home, with a quick stop in Charlottesville to load up on groceries for the week. All in all, I was definitely happy we finally got that to the Virginia coast before we moved!
I don’t know if it’s the finishing grad school or moving or lack of a routine or a bit of everything, but I’ve been seriously struggling in the motivation and energy department lately. My body’s been craving lots of carbs because of this, which in the long run leaves me with even less energy. So this week, I’m making it my intention to focus on eating foods that fuel my body and leave me with lasting energy all day long. As someone who thrives on routine, I think I’m going to be a little discombobulated until we get settled again but hopefully this will help get my body going in the right direction.
If you need a similar energy boost, here’s a few recipes that I’m going to be making this week:
