Sometimes I just need to change something up a bit to crave more salads and this mustard vinaigrette has me doing just that.
I often just revert back to the easy olive oil + vinegar combo but find that can get kind of boring. However, I don’t typically go for store bought dressings since they can be full of calories and unnecessary ingredients.
This mustard vinaigrette literally takes less than five minutes to make and is such a great versatile item to have in the fridge for salad dressing, marinades, etc. You can add a little honey to cut the acidity a bit if you’d like but it’s fine without it as well.
Makes about 3/4 cup
1/2 cup olive oil
1 tablespoon spicy ground mustard
1 tablespoon red wine vinegar
1 tablespoon lemon juice
1 clove garlic, minced
1 teaspoon honey, optional
Combine all ingredients in a jar and use a whisk to combine. Store in fridge and use as needed.
