Happy Monday, friends!
How was your weekend? I’m working on another magazine article (brunch recipes!) so I spent most of my weekend recipe testing + shooting for the upcoming issue. We also went and saw a local ballet production of Romeo and Juliet on Saturday night and it was absolutely gorgeous! The husband was a trooper for agreeing to miss most of the final four basketball games that night to go to the ballet, which he wasn’t super thrilled about, but I love when we can get out of the house on the weekend and do something atypical like go to the theater–though it always makes me miss being on stage!
It was gloriously sunny on Sunday, which is typically my work day, so I set up my laptop outside to at least enjoy the sunshine a bit. It’s hard to believe that it’s already April and that we’ll be graduating in just a few short weeks! I definitely (always) have a lot of accomplish as the semester nears the end but I’m trying to stay focused and push through.
This pina colada kale smoothie will make you feel like you’re on vacation for a few minutes, even if you’re bogged down in work like me–hope you enjoy!
Pina Colada Kale Smoothie
1/2 cup frozen pineapple
1 cup kale, destemmed
1 tablespoon honey
1 teaspoon ground flaxseed
1 teaspoon chia seed
1 cup coconut milk
1/2 cup unsweetened vanilla almond smoothie
Combine all ingredients in blender and pulse until combined.
Time: 5 minutes
