How was your weekend? I must say how proud and humbled and inspired I am by everyone who participated in the women’s march on Saturday. I couldn’t make it myself but it was beyond amazing to see everyone come together–I don’t think I’ve ever liked/loved so many photos scrolling through my social media!
Weekends in our family always mean brunch in some form or another–usually just eggs/hashbrowns, but sometimes, I decide I want something on the sweeter side, like this cinnamon raisin french toast.
This french toast recipe really couldn’t be any easier, especially since it uses the Ezekiel cinnamon raisin bread as a base, so you can’t really go wrong. Just prep it the night before and pop it in the oven the next morning and brunch is served!
Overnight Cinnamon Raisin French Toast
4 slices cinnamon raisin bread, frozen
4 eggs, beaten
1/2 cup unsweetened vanilla almond milk
1/4 teaspoon vanilla
1/2 teaspoon cinnamon
maple syrup, for serving
Place cinnamon raisin bread in a loaf pan.
In a medium bowl, whisk together egg, almond milk, vanilla, and cinnamon.
Pour mixture over cinnamon raisin bread then cover with aluminum foil and place in fridge overnight.
The next morning, pre-heat oven to 350 degrees.
Place cinnamon raisin bread french toast in the oven and bake for about 40 minutes, or until done.
Serve with maple syrup, and enjoy!
Time: 45 minutes (+ overnight)
