Happy Monday, friends! How was your weekend?
Sorry for going all MIA last week. It was our last week of the semester and I had two papers + an article due today, so I was in game mode to get everything finished on time. Thankfully, I did, and though I’m not quite finished with everything for the semester, I feel like I can breath a little again at least!
My sister introduced me to this chocolate peppermint almond beverage from Trader Joe’s while I was in CO visiting over Thanksgiving Break and I can’t get enough! It has just a touch of peppermint, and I’ve been mostly heating it on the stove with our leftover coffee in the morning to have as a homemade peppermint mocha or in a smoothie, as I did here.
I get to go back to Trader Joe’s in Charlottesville this week, so I’m going to have to stock up to get me through the winter!
Chocolate Peppermint Smoothie
4 ounces chocolate protein powder
3/4 cup unsweetened vanilla almond milk
Combine all ingredients in a blender and pulse until smooth.
