Every weekend, I try to make at least one snack item in bulk for the rest of the week. I am definitely a snacker and if I don’t have healthy choices made in advance and on hand, I don’t always make the best choices.
This snickerdoodle chia pudding is super filling and tastes like a decadent dessert. It was the first time I’d made overnight chia pudding with almond milk, instead of coconut milk, and blended the chia seeds, instead of just mixing them in, and I loved the result!
Snickerdoodle Chia Pudding
1 cup unsweetened vanilla almond milk
1/3 cup chia seeds
1/2 cup dates, soaked for at least 2 hours
1/4 teaspoon vanilla
1/8 teaspoon sea salt
1/4 teaspoon cinnamon
Combine all ingredients in a high powered blender and blend until smooth. Place in two airtight containers and let set up overnight.
Time: 5 minutes (+ overnight to set up)
