These peanut veggie soba noodle bowls are one of my absolute favorite things to make.
The ingredient list for the peanut sauce can seem a little daunting at first, but we use pretty much every one of the ingredients when we make noodle bowls, asian-inspired soups, and stir fry, so they really do get a lot of use.
I really add whatever veggies I happen to have on hand as well. This weekend, that happened to be carrots, radishes, and cilantro, but I often add edamame, green beans, bok choy, broccoli — anything and everything.
They’re great topped with a few toasted sesame seeds as well.
Peanut Veggie Soba Noodle Bowls
2 ounces soba noodles
1 carrot, peeled and sliced
3 radishes, slices
1/4 cup cilantro, chopped
1 serving peanut sauce
Cook soba noodles according to package directions. Drain.
In a large bowl, combine soba noodles, carrots, radishes, and peanut sauce. Use tongs to mix until combined.
Top with cilantro and enjoy!
