How was your weekend? It was homecoming week here in Blacksburg so it was crazy busy everywhere, but I managed to get some much needed work done and even snuck in a pedicure and brunch with friends–it was the perfect blend of productive and relaxing.
I also finally got around to making this easy peanut sauce recipe to share with you all. It’s one of my go-to recipes for asian dishes because its hearty and full of flavor but so much better for you than most traditional peanut sauces.
I’ll be sharing a soba noodle veggie bowl with this sauce later this week!
Easy Peanut Sauce
Makes about 1/2 cup
1/2 cup creamy peanut butter
2 tablespoons reduced sodium soy sauce
3 tablespoons rice vinegar
1/4 teaspoon sesame oil
3/4 teaspoon Sriracha sauce
1 teaspoon chili paste
1/2 teaspoon grated ginger
2+ tablespoons water
Combine peanut butter, soy sauce, and rice vinegar in a small sauce pan over medium-low heat. Stir until peanut butter starts to dissolve into sauce. Reduce heat to low.
Stir in sesame oil, Sriracha, chili paste, and ginger. Add water until desired consistency is reached.
Save in fridge or stir into your favorite noodle dish.
