I’m definitely one who will snack on whatever is around me, so I’ve been trying to make a big batch of healthy snacks to always have on hand.
Since I seem to have lost my food processor blade (seriously, still not sure how that is possible, but I can’t find it anywhere!), I needed something that could be mixed by hand but still sticks together.
Luckily, coconut flour makes a great binder–it absorbs liquids like crazy! If you had a food processor (and a blade!), you may get away using a little less water as a binder.
Coconut Fig Balls
Makes about 1 dozen
6 dried figs, chopped
1/2 cup coconut flour
1/4 cup almond butter
1 tablespoon coconut oil
1 tablespoon lime juice
1/4 teaspoon vanilla
2 tablespoons honey, softened
2 tablespoons shredded coconut
1/2 teaspoon ground cinnamon
1 tablespoon chia seeds
1 tablespoons ground flaxseeds
2 tablespoons water
Combine all ingredients in a large bowl and mix until dough sticks together when pressed with fingers.
Roll into balls and place onto a parchment paper lined baking sheet.
Place in freezer for at least one hour.
Remove and eat immediately, or store in fridge.
Time: 70 minutes, with freezing time
