How was your weekend? It was pretty relaxing around these parts–I spent most of my weekend reading and working on more recipe creation for a magazine article, which took up a lot of time but it’s always nice to spend quality time in the kitchen instead of sitting in front of a computer all day.
After having an acai bowl in Charlottesville a few weeks ago, I decided it was about time to indulge in a little acai powder of my own so I could make my own version at home. The recipe is really simple–pretty much like a standard smoothie recipe–but you do have to be careful about how much liquid you use so that the consistency is a bit on the thicker side.
I’m planning on making a cacao maca one next!
Berry Acai Bowl
1/2 frozen banana
1/4 cup plain Greek yogurt
1 tablespoon almond butter
1/4 cup frozen mixed berries
1/2 scoop vegan protein powder
1/2 cup almond milk
1/2 banana, sliced
Combine banana, yogurt, almond butter, berries, acai powder, protein powder, and almond milk in a blender and pulse until smooth.
Pour into a bowl and top with granola, chia seeds, ground flaxseed, hempseed, and banana.
Time: 5 minutes
