Happy Monday, friends! I hope you had a wonderful weekend!
It was a glorious 63 degrees here yesterday, so I tried to at least go on a nice long walk and get some reading done outside before the next potential snowstorm later this week-I am so ready for spring to be here for good!
I also got a little recipe creation time in the kitchen (finally!) and made a few of these super easy overnight chia puddings. I’ve seen a bunch of different versions of these lately but hadn’t attempted them myself yet.
I was completely amazed at just how pudding like the texture was after it set up in the fridge overnight. You can still see the chia seeds in these, but apparently, you can get a more mousse-like texture if you grind the mixture in the blender first. Next time!
Overnight Chia Pudding
1.5 cups unsweetened vanilla almond milk
1/3 cup chia seeds
1/4 teaspoon vanilla extract
1/4 cup shredded coconut
1 tablespoon chocolate protein powder
2 tablespoons raw cacao
3 tablespoons maple syrup
1/4 teaspoon cinnamon
Combine all ingredients in a large mixing bowl and whisk until completely mixed. Pour into 4 separate mason jars and place in the fridge to let set up overnight.
Eat the next morning for breakfast or enjoy as an afternoon snack!
Time: 5 minutes (+ overnight to set)
