How was your weekend? I wish I could say mine was full of Super Bowl parties and overeating but alas, I’ve been trying to get everything together to leave for vacation on Friday so that wasn’t the case. Tough life, I know.
I did manage to spend a little time in the kitchen, which was a much needed distraction from schoolwork, and came up with these amazing freezer waffles.
I’ve been craving having a stash of freezer waffles again to grab at my convenience ever since I finished off the last of these this fall. They’re vegan too and would make a perfect V-Day brunch item!
Berry Freezer Waffles
Makes 8-10 waffles
2/3 cup vegetable oil
2 cups unsweetened vanilla almond milk
1 teaspoon vanilla extract
2 tablespoons sugar
3 cups all purpose flour
4 teaspoons baking powder
1 teaspoon salt
3 cups fresh or frozen berry mix
Pre-heat waffle iron.
Combine oil, almond milk, vanilla, and sugar in a small bowl and mix well.
In a separate bowl, combine flour, baking powder, and salt, using a whisk to ensure an even distribution.
Carefully pour the liquid ingredients into the dry and stir until just mixed.
Fold in berries.
Place about 1/2 cup of waffle batter into waffle iron and cook according to directions. When done, place in a single layer on a baking sheet and repeat until all the batter is gone.
Place baking sheet in freezer for about 30 minutes and then transfer waffles to a plastic bag. Store in the freezer and toast when ready to eat.
