I’ve seen variations of this recipe before but a lot of them used strange ingredients or weren’t as healthy as I wanted or weren’t completely vegan. So, with another indoor snow day looming, I got up Saturday morning and got to work!
These are really so simple to make. The goal is just to create a super peanut-y dough that has a cookie dough like texture and flavor. The peanut & coconut spread I used instead of just peanut butter really helps with that consistency–you might want to add a little extra coconut oil if you just use regular peanut butter.
Also, make sure to use a creamy, moist peanut butter for best results and feel free to add a touch more almond milk to reach the desired consistency.
The combination of the vanilla protein powder with the peanut flavor is so good–I seriously could not stop eating these all day!
Peanut Butter Cookie Dough Protein Balls
Makes about 16
1/4 cup vegan vanilla protein powder (I used Plant Fusion)
3/4 cup creamy coconut & peanut spread (I used Earth Balance)
2 tablespoons ground rolled oats
1 tablespoon maple syrup
2 tablespoons unsweetened vanilla almond milk
2 tablespoons cacao nibs
1/2 teaspoon cinnamon
1/4 teaspoon sea salt
Combine all ingredients in a large bowl and mix until a creamy soft dough forms.
Use your hands to roll into small balls of your desired size.
Store in an airtight container in the refrigerator.
Time: 10 minutes
