How was your weekend? Things were pretty busy around here since I had to make a trip up to Charlottesville to see my chiropractor before getting lots of school work done. The temperatures are dropping again but yesterday was gloriously sunny which makes up for it a bit, I guess.
This pumpkin chai overnight oats recipe is really similar to last week’s smoothie recipe, but I loved that flavor combo so much that I couldn’t resist.
Plus, overnight oats are so easy– you just put everything together in a jar or container and wait till morning!
Any last pumpkin requests before I retire it (maybe…) for the season?
Pumpkin Chai Overnight Oats
1/4 cup canned pumpkin
1/4 cup steel cut oats
1/4 cup chai latte mix
1/2 cup unsweetened almond milk
1/4 teaspoon cinnamon
1 packet (1g) stevia
Combine all ingredients in mason jar. Place lid on tightly and store in fridge overnight.
Remove in the morning and enjoy!
Time: 5 minutes (+ overnight to “cook”)
