Sometimes a little easy comfort food is in order and this grilled cheese fit that label perfectly.
I had made chicken noodle soup over the weekend and had leftover homemade bread that was thick and crusty–perfect grilled cheese bread, in other words. So, I paired it with a little store bought pesto, CSA tomatoes, and leftover mozzarella from pizza night and threw together the world’s easiest but most satisfying dinner.
I added a little salad on the side just to pretend like it was a healthy meal but who’s kidding. Sometimes you just need to eat like a kid!
Pesto, Tomato & Mozzarella Grilled Cheese
4 slices french bread, homemade if possible
2 tablespoons garlic aioli
2 tablespoons pesto
8 slices fresh mozzarella cheese
6 slices tomato
Assemble each sandwich by spreading half of the garlic aioli and pesto on each pair sliced bread.
Top with mozzarella cheese and tomato.
Place sandwich on cast iron griddle and grill until bread is toasted and cheese is melted, about 3-4 minutes per side.
Serve immediately and enjoy!
