I’ve been slowly working my way through that can of pumpkin and this smoothie was a perfect use!
Pumpkin spice everything is starting to infiltrate every store already, so since I had the pumpkin already, I figured why not jump on the bandwagon and make a smoothie version of everyone’s favorite latte.
Funny story: I’m actually not in love with Starbucks’ Pumpkin Spice Lattes. Blasphemy, I know! I prefer a chai latte with a pump or two of pumpkin syrup added…somehow the chai spices mixed with the pumpkin just do it for me much more than the original drink.
Still, however, pumpkin pie is one of my favs, and I’m absolutely obsessed with the flavor of this smoothie–not quite sure where the contradiction lies!
Pumpkin Spice Smoothie
Makes 1 smoothie
1 frozen banana
1/4 cup plain Greek yogurt
1/2 cup canned pumpkin
1 teaspoon maple syrup
1 cup unsweetened almond milk
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon ginger
1/4 teaspoon vanilla
Place all ingredients in a blender and pulse to blend well.
Serve immediately or store for later. Enjoy!
