I have made many versions of hummus in my life (see here and here), but none as quick and easy as this one. Its is the perfect I need a quick snack or I’m out of tahini recipe and so easy to modify to make with whatever ingredients you happen to have in your pantry.
When I was trying to transition into snacking on less carbs, my mom actually made a version of this with the boxed white cannellini beans from Whole Foods and some roasted garlic and olives. Served with a few carrot sticks, cauliflower, and whatever veggies you happen to have in you fridge, it really is the perfect snack!
Its also great to have on hand since I now tend to be a little nut heavy on my snacking with my portable snack jar, and so it helps me to quickly and painlessly incorporate more veggies into my day.
Quick & Easy White Bean Hummus
Makes about 1 cup
1 box (13.4oz) cannellini beans
1 tablespoon olive oil
1 teaspoon lemon juice
1/4 teaspoon salt
1/4 cup artichoke hearts
smoked paprika, for topping
Place beans, olive oil, lemon juice, and salt in a food processor. Blend until smooth, adding a little more lemon juice, if needed to reach desired consistency.
Add artichoke hearts and pulse until just combined, leaving some chunks.
Serve immediately, or chill, and enjoy!
