It’s pretty rare to come across a magazine recipe section or cookbook that just sort of speaks to me, but that’s exactly what this one did at Barnes and Noble this weekend. I love the cookbooks I currently own, but have just been in a total cooking rut. Burritos? Fish tacos? Enchiladas? While I love those staples, I was wanting to mix it up a little, especially with warm weather on the way, and finding a way to add more fruits + veggies is definitely more at the forefront of my mind.
I kinda hate that the magazine prefaces their One Dish meal declaration with skinny. Skinny is always an added plus, but I’m looking for healthy, flavorful recipes that focus on in season ingredients–exactly what this cookbook focuses on, which I realized once I actually opened it!
Of course, the gorgeous picture on the front of veggie tarts may have also persuaded me to open it, plus the “Market-Fresh Main Dishes” caption. God knows, I’m a sucker for those! Once on the inside, the magazine was full of beautiful, accurate pictures with easy to read and follow recipes with even simpler ingredient list–just what I was looking for.
Monday’s zucchini pizza crust was inspired by one of the recipes from this magazine and since purchasing it on Saturday, I’ve made 3 other of the recipes: mango chicken wraps (pictured here), southwest salmon paella with asparagus, and chicken wild rice soup with zucchini, and they’ve all turned out fabulous!
The special edition of the magazine was $10, but with how much use I’ll get of it, I know it will more than pay for itself.
Anyone else come across any inspiring recipe collections lately?
