I had fun sharing what I ate last week with you all, so I thought we’d look at take two–weekend addition. We don’t have much outdoor space, so we often go over to a friend’s house to barbecue and soak up the sunshine. Since Cinco de Mayo was Monday, I decided to make a Mexican food themed dinner (really this happens most weekends!) with some of my from scratch favorites.
But let’s back up a bit. I started out the day with the usual smoothie for breakfast:
I waited way too long after running + barre3 to refuel, so I had to make lunch as fast as I could. That meant leftover couscous topped with a poached egg–delish! (I took the photo before I added the egg–I couldn’t wait to eat!).
And then came the fun part. For snacking/dinner, I made:
And then for dinner, put it all together for a little build your own burrito bar, straight from the BBQ with grilled corn tortillas, beans, squash, salsa, and guac for me, and lots of grilled meat for the boys. We turned it into quesadillas for actual Cinco de Mayo! Recognize the bird platter?
I can’t wait for tomato season to make even fresher homemade salsa!
