As I get back into regular recipe creation, I thought it might be fun/insightful/horrifying to look at what a day in my food life looks life because, well, I pretty much plan my life around what I eat. It sounds a bit obsessive, but if I don’t, I end up eating anything I can get my hands on.
So, every night either while making dinner or after doing the dishes, I put together my breakfast, lunch, and snacks for the day ahead. Here’s what Monday looked like:
6am. Make tea while brushing my teeth.
6:20am. Drink tea while getting ready.
6:50am. Grab my smoothie out of the fridge to drink on the road. These days my go-to combo has been a banana, greek yogurt, kale, superfood powder, chia seeds, flaxseeds, unsweetened vanilla almond milk, and a little water to help it mix.
9am. This wasn’t in the meal plan for the day, but a friend brought me back my fav cheese crunchies from Trader Joe’s, and I couldn’t resist digging in and having a few. Or a lot. This is why I don’t keep snacks in my house.
11am. Eat lunch. For Monday, that meant flatbread leftovers. I like to take my lunch in multiple containers to make transportation and warming up easier and to reduce my dependency on plastic baggies. I had the flatbread in one container to nuke for a few seconds and then used the lid as a plate while I piled on the goodies. I also like to take my own cloth napkin most days–it makes lunch seem fancier!
1:15pm. I’m ready for a snack and/or second lunch. Sometimes that means a salad but this day, it meant a good ol’ Kashi granola bar. I try to save things like granola bars for days when I’m in a rush and/or didn’t make much the night before.
7pm. After a trip to the gym, Jeff and I worked together to create this concoction, which felt so much more like a normal adult meal than we’re used to: mustardy salmon patties with a dill aioli, goat cheese wild rice, and salad with feta, olives, cucumbers, and avocado. Delish!
9:30pm. Time for a cup of relaxing tea. That night, it was chamomile and lemon, one of my favs.
