Happy Monday, everyone!
I hope you had a lovely weekend! We were snowed in for awhile around these parts–we ended up with over 20 inches of snow! Luckily, we were able to dig ourselves out Saturday morning before things became a skating rink out there. I’m so used to it snowing a little but then melting by the afternoon that it’s hard to wrap my mind around just how much snow we still have left!
Jeff and I had fun walking around and playing in it on Thursday + Friday, but now, I’m more than ready for spring. I mean, it’s gorgeous and all, but cabin fever is definitely starting to set in!
I did try to get a few things done during my hours inside, including a little meal planning. I used to be really good with meal planning, especially when we got our CSA veggies weekly in SLO. But since our move, I’ve pretty much stopped and unfortunately, that means that our take-out intake has increased because when I get home and can’t figure out what to make/didn’t prep in advance, I’m much more likely to pick something up.
To get back into it, I thought about joining one of those meal planning websites that actually creates what you need to prep on the weekend/early on in the week (when you still have energy!) in order to create meals the rest of the week. I also contemplated getting Rachael Ray’s newish Week in a Day cookbook, but ultimately decided I wasn’t willing to give up that much freedom. I like my own recipes too much!
I might try them someday, but for now, I want to try it on my own. My first attempt is pretty disjointed–I kinda forgot about that whole recipes need to build on each other thing–but at least there’s a plan. Plus, I’m pretty adept at using my freezer to store the leftovers and using (most of) it before it goes bad.
Once upon a time, I created a word document with dinner ideas + necessary ingredients + links to recipes, but this week, I just went “old school” with my iPad notepad.

Spinach & Ricotta Stuffed Shells (recipe soon!)

French Bread Pizza using the leftover cracked wheat bread + marinara + olive bar olives, roasted garlic, and sun dried tomatoes (needed an easy cooking night before choir practice!)
Chili Mac & Cheese from The Heart of the Plate (can’t wait to tell you how this turns out!)
Peanut Noodles using leftover noodles from Sunday’s stir fry
Barbecue Turkey Meatball Sandwiches

We’ll be in Charlottesville for Jeff’s birthday weekend!
Okay, that seems like a whole lotta carbs–must have been the effect of snowed in menu planning! And I’m sure after a weekend of eating out, I’ll be wanting lighter far next week. I’m already thinking a main dish kale caesar sounds divine!
