This sandwich was one of last week’s snow day creations. I’d already had breakfast (a little yogurt and granola) but after coming back from the gym, I was starving.
I had baked a fresh loaf of bread in the bread machine the day before, so I cut myself some extra large slices and got to work with the rest of my second breakfast. Or was it elvensies?
I checked the fridge and saw what I had to work with: a little gruyere cheese, store bought sun dried tomato pesto, avocado, cilantro, hot sauce, and cream cheese. Um, yes, please!
I only lightly toasted the bread in order to allow for movement to hold together this ginormous creation and once it was all assembled, I took photos as quickly as I could, so I could dig in.
Gotta love snow days!
Egg, Sun Dried Tomato, & Gruyere Breakfast Sandwich
2 slices wheat bread
1 egg, fried
1 tablespoon sun dried tomato pesto
1 tablespoon cream cheese
2 slices gruyere cheese
2-3 sprigs cilantro
3 slices avocado
hot sauce, to taste
Assemble sandwich by spreading cream cheese on one slice of bread and sun dried tomato pesto on the other.
Top with fried egg, gruyere cheese, cilantro, avocado, and hot sauce.
Time: 10 minutes
