What do you do when you have a loaf of Shepherd’s bread sitting on the counter staring you down? Make grilled cheese, of course!
Especially when you purchased a bag of avocados from the grocery store on Sunday since none of the single ones were ripe enough and guac is calling your name. Glorious guacamole. And Jeff had talked me into getting a little bacon this week and although I’ve been trying to really cut back on my meat intake, I just couldn’t resist this amazing combination. You all know how I love my cooked avocados!
A few years ago, Jeff and I invested in our more rustic panini maker: a cast iron grill pan complete with a cast iron press. I love how quickly the sandwiches cook and the grill lines it leaves on the bread and, you know, just the whole feel of cooking with heavy cast iron. It makes grilled cheese sandwiches even more fun–and makes me crave them so much more than I should!
Guacamole & Bacon Grilled Cheese
Makes 1 sandwich
1/4 cup guacamole + 1/4 cup added chopped tomatoes
4 slices pepperjack cheese
3 slices bacon, cooked
2 slices french bread
Heat grill pan over medium heat.
Assemble grilled cheese sandwiches by placing guacamole, cheese, and bacon on the bread.
Place sandwich on the grill pan and cook, using a panini press if available, both sides until cheese is melted and bread is toasted.
Serve immediately and enjoy!
