Growing up, I ate my fair share of tuna salad sandwiches, but always shied away from its fowl counterpart. However, when we moved to Blacksburg, Jeff became obsessed with the spicy chicken salad sandwich from a local coffee shop, Next Door Bake Shop, so I broke down and tried it–and it was absolutely divine!
So naturally, we set out to make our own version. Since we’ll be going out of town for the holidays, we just picked up a rotisserie chicken at the grocery store to make things easy and to help us focus on cleaning out the fridge this week.
After shredding the chicken, we combined it with a little celery, grapes, mayo + Greek yogurt, spices, and sriracha for the added kick. So good! Next time I think I’ll try adding a few nuts and maybe some peppercinis to round out the heat.
