Happy Monday, friends!

I hope you enjoyed your second to last weekend till Christmas! We had a bit of a crazy weekend around these parts, with 2 choir concerts and trying to get the house ready for our trip back home. Still, we managed to catch a matinee showing of The Hobbit, one of our favorite books + movies series, along with The Lord of the Rings. While I am usually sad to see the weekend come to a close, I am so excited for this week to get going, so we can head back to California for the holidays!

During my lazier weekend last week, I did manage to make this holiday treat, much to the delight of Jeff. We had been forecasted to get an ice storm that day, so I decided that I was just going to bunker in and spend all day without leaving the comfort of my own home. And even though the storm wasn’t quite as bad as expected, I was glad to have the excuse.

Still, Jeff had his heart set on this peppermint bark, so he braved the elements and went to the grocery store to get the necessary 3 ingredients: dark chocolate chips, white chocolate chips, and candy canes. Yep, that’s it.

I started to make it without too much of a plan and originally layered the two types of chocolate in one of my square Le Creuset baking dishes. After letting it cool, I realized that was a major mistake. I couldn’t even get my knife through it, it was so thick! So I reheated in the oven and spread out the layers more thinly on a baking sheet this time and once it hardened, it broke up easily into bite size chunks.

I’m planning on giving some away as a gift, but I think Jeff would prefer to eat it all! We’re not planning on doing any more holiday baking in Blacksburg, but be ready for an epic baking session, California!

Dark Chocolate Peppermint Swirl Bark

Ingredients:

10 ounces dark chocolate chips

24 ounces white chocolate chips

12 candy canes, crushed

Steps:

Place a piece of parchment paper on a baking sheet and set aside.

Create a double broiler by placing a glass bowl over a pot of simmering water so that the glass just touches the water.

Place the dark chocolate chip morsels in the glass bowl and heat, stirring with a spatula occasionally, until melted.

Carefully remove the glass bowl and pour the chocolate onto the baking sheet, spreading evenly.

Clean your glass bowl and then place back on the pot of water. Place the white chocolate chip morsels in the bowl and heat, stirring with a spatula occasionally, until melted.

Carefully remove the glass bowl and pour the white chocolate on top of the dark chocolate, spreading with the spatula to create a swirled effect.

Top with crushed candy canes and let harden, either at room temperature or in the fridge.

Once the chocolate hardens, use your hands to break into chunks.

Give as a gift or indulge in the entire batch yourself–and enjoy!

Time: 15 minutes hands-on, about 1-2 hours to harden completely
