Happy Monday, everyone!
How was your weekend? We had such a relaxing weekend around these parts, it was beyond wonderful. I kicked off Saturday morning with my first (2 miles!) run since the marathon and then did a little Barre3 workout. It’s so nice to have workouts not take up half of my Saturday! Then, we did a little Christmas + grocery shopping ahead of what was being hyped as a possible major ice storm.
And since we had all of our chores done on Saturday, I was able to spend most of Sunday cooking + sitting on the couch enjoying my Christmas tree and my lap kitty. Pretty much a perfect weekend.
One of the things I ended up making Sunday morning was this Apple Pie Farro Oatmeal. The last time I’d made farro I’d thought it would make perfect oatmeal, so I cooked some up in the morning along with some caramelized apples with apple pie filling spices.
There really isn’t much better to me than having time to cook tasty, healthy meals and spending some much needed time in the kitchen–thank god for weekends!
Apple Pie Farro Oatmeal
1/2 cup farro, uncooked
1.5 apples, peeled and chopped
1 tablespoon brown sugar
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon cloves
1 tablespoon maple syrup
almond milk, for serving
Cook farro according to package directions.
Place apples in a small saucepan and heat over medium heat. Continue to cook, stirring often, until apples soften and brown.
Reduce heat to medium-low and stir in brown sugar, cinnamon, nutmeg, cloves, and maple syrup. Cook for another 3-4 minutes.
Place farro in a bowl, top with apple mixture, and add a little almond milk, if desired.
Time: 15 minutes
