Happy Monday, friends!
I hope you had a wonderful first weekend of November! Fall Back for daylight saving’s time has to be one of the greatest days ever. I woke up Sunday morning feeling totally refreshed, even after staying up way later than I normally do (past midnight, people!). I had to run 12 miles, but first decided to get in a little couch time with my kitty and computer before finally heading out the door at 8:45. I finished running around 11 and after stretching and showering, Jeff and I headed out to brunch at 12 and then had a relaxing trip to the library and grocery store. It’s amazing how just one extra hour can make such a difference!
We also came home and made a big pot of potato and leek soup (recipe coming soon!), dutch oven bread, and stuffed ricotta + spinach shells for tomorrow night. Here’s to hoping the rest of November goes as well!
