Happy Monday, friends!
I hope you had a fabulous weekend! And what a gorgeous weekend it was here in Southwestern VA. Lows in the mid-40s, highs in the mid-70s–I was in heaven!
I was also beyond stoked to finally cross the half way point in training this weekend, surpassing the half marathon mark and hitting the most mileage ever (14!) for me. And then after the long training run, I was able to hit up the Blacksburg Brew Do to celebrate. It could not have been a better day to spend entirely outdoors doing two of my favorite things!
We decided to bike to the event and then after a visit to a friend’s house and a walk home, I realized on Sunday that my body had propelled me 25 miles via running/biking/walking. Needless to say, I spent most of Sunday sitting on the couch, too exhausted to accomplish much of anything, including making dinner. Thank God for Chipotle!
Jeff and I made this pasta Friday night to get me ready for my run Saturday morning. I rarely add chicken to pasta unless I’m making more of a lemony, white sauce dish, but I can feel my body craving more protein on training days, so I threw a little in there this time. We also had a ton of CSA veggies left, so I diced them up, threw them in the pasta, and once the marinara sauce was added, you couldn’t even tell there were any veggies at all!
Chicken Pasta w/ Hidden Veggies
1 chicken breast
2 cups rotini pasta, uncooked
1/2 cup marinara sauce
1 turnip, diced
1/4 white onion, chopped
3 cloves garlic, chopped
1/2 anaheim pepper, diced
2 stalks celery, diced
6 green olives, chopped
4-5 sun-dried tomatoes, chopped
Cook pasta according to package directions. Drain and set aside.
Heat olive oil in a frying pan over medium heat.
Season chicken with salt and pepper and place frying pan. Cook 4-5 minutes per side, or until done. Remove from pan and let rest.
Add turnips, onion, garlic, pepper, celery, olives and sun-dried tomatoes to the same frying pan. Saute, stirring often, until vegetables are soft, about 5 minutes.
Chop the chicken into 1/2 chunks and add back into the frying pan with the vegetables. Stir in pasta noodles and marinara sauce and mix well.
