Happy Monday–and happy Labor Day!
It’s been so wonderful having this three day weekend to have extra time to get things done, especially since I was kinda useless after my 12 mile run Saturday morning. I can’t believe I’m already almost to a half marathon–I’ll hit 14 miles in two weeks, the farthest I’ve ever run! I’m so happy I chose a slow mileage building training plan, because once I run a certain distance, knowing that I only have to run 2 miles more than that the next time doesn’t seem nearly as difficult as running 26 miles. 2.5 months left!
I also have been eating myself through Labor Day weekend. That’s what holidays are for, right? We went out for brunch and dinner on Saturday to watch the Virginia Tech game (…) and then made this delicious concoction Sunday night. I love making thin crust pizza and whenever I can convince Jeff to go that route, I am one happy camper!
Of course, I appeased him with a little chicken sausage and some goodies from the olive bar at the grocery store. I love, love using the olive bar as topping inspiration when I’m wanting a variety of ingredients without wanting to pay the full price for the whole container. Plus, if you stick to the less heavy items (i.e. lots of roasted garlic or feta cheese), it’s an even better deal!

Garlicky Chicken Sausage & Sun Dried Tomato Pizza
1 thin crust pizza dough, homemade or store bought
1/2 cup marinara sauce
2 ounces mozzarella cheese, grated
2 links roasted garlic chicken sausage
8 cloves roasted garlic
1/4 cup sun dried tomatoes
1/4 cup marinated green olives, chopped
Pre-heat oven to 450 degrees.
Heat olive oil over medium heat in a frying pan. When warm, place sausage in the pan and cook until done, about 5 minutes per side. Place on cutting board and chop.
Roll pizza dough as thin as possible and place on baking sheet.
Assemble pizza dough with marinara sauce, mozzarella cheese, chicken sausage, garlic, sun dried tomatoes, and green olives.
Place pizza in the oven and cook until cheese is bubbly and crust is golden brown, about 25 minutes.
Cut into slices and enjoy!
