Happy Monday everyone!
How was your weekend? We had a pretty relaxing two days in our household which was beyond needed after our whirlwind D.C. trip last weekend. We made it to the movies Friday night to see the latest Star Trek (the parts I stayed awake for were amazing!) and then spent most of the day Saturday cleaning the house and getting waaay too much laundry done.
I’ll take pretty much any household chore over laundry. Crazy stack of dishes in the kitchen? Cleaning the toilet? No problem. But laundry is enough to make me crazy. Maybe its the multiple steps to getting just a single load done or the fact that I always forget about stains and have to rewash. Or maybe its just the folding…shudder. Yep, I think that may be it.
In addition to getting the house back in shape, I also had to work on getting my body and eating habits back in shape this weekend as well. After eating out all weekend in D.C. (late night waffles, anyone?) and then continuing to host company all week, my body was completely out of sorts by the time Saturday hit.
The remedy? Back to basics. Which to me, means lots and lots of smoothies. I started out the weekend with a vanilla Greek yogurt mix and then yesterday, was craving a little ginger, so came up with this lovely carrot juice gingery creation yesterday morning. There’s nothing like a healthy dose of fruits + veggies to jump start healthy eating!
And now the fridge is loaded with lettuce, squash, zucchini, peppers, mangoes… here’s to a real food week!
Carrot Ginger Smoothie
1/2 cup plain Greek yogurt
1 tablespoon honey
1 teaspoon grated ginger
1 cup carrot juice
1/2 cup almond milk
Combine all ingredients in a blender and pulse until smooth.
