On Saturday, I decided to head to our local farmer’s market for the first time in what seems like ages. You see, I went once this winter but there were hardly any vendors or produce, which, I suppose, makes sense! Still, after years of living in a place that has a farmer’s market every day of the year all year round, I was a little disappointed.
But since the weather has warmed up a bit, I decided to head back again finally to see what they had. There were quite a few more vendors compared to the last time I went, but still more products and baked goods than actual vegetables. So, call me weak or just not wanting to waste the trip, I let Jeff talk me into getting pork chops from one of the local meat vendors. Bad Kelsey!
I have not had pork chops in years, so this was all Jeff–I didn’t even set foot in the kitchen! He really wanted to make a fruit compote for the sauce, so after a little research, we stumbled upon this gem of a recipe: Rachael Ray’s Grilled Pork Chops with a Fresh Berry Compote.
Rachael Ray has long been one of my kitchen heroes (home cook love!) and whenever I pick up her cookbooks, I’m reminded of how much I love her cooking style and easy to follow recipes (I just downloaded her original Look + Cook from our local library ebook site and may have screenshot-ed a few dozen recipes or so…).
The blueberry compote was to absolutely delicious and with my pork chop completely smothered in it, I almost forgot what I was eating!
