I told you I’d have a recipe full of fruits and veggies today to make up for Monday’s monstrosity. Truth be told, I’m more than ready to get back into my daily smoothie for breakfast routine.
For some reason, oatmeal never seems to fill me up enough, and I’m always hankering for a snack only 30 minutes after I’ve eaten. Plus, there just seems something so refreshing about starting each day with a smoothie while oatmeal just seems a little heavy and boring.
As you all know, smoothie recipes are some of my favorite things to experiment with here on the blog, as evidenced by the myriad recipes in the archives. Smoothies were one of the first “meals” I learned how to make on my own when I was young and for awhile (college?), they were pretty much the only thing I could make.
This recipe is a direct result of my yearning for spring or heck, a tropical Bahaman beach vacation. It contains mango, banana, the must have smoothie staple–greek yogurt, a healthy amount of kale, and coconut almond milk.
I’ve never liked a strong coconut flavor before but the combination with the almond milk balances it out just enough for a tropical energy shot without the full powerful flavor.
And the bonus of nice tropical flavors, is it is a reminder to get back in a daily gym routine–maybe if I get in shape, the beach vacation will follow. A girl can dream, right?
Tropical Kale Smoothie
1 banana, chopped
1 mango, chopped
1 cup kale, chopped
5 ounces honey Greek yogurt (about 1 cup)
1 cup coconut almond milk
Place all ingredients in a blender and pulse until completely combined.
Time: 5 minutes
