Happy Monday folks! It was a beautiful weekend here in Blacksburg–cloudy and rainy on Friday but then 70 degrees and sunny both Saturday and Sunday. Do we really have to go back to winter this week?
I also had a 3 day weekend, so we decided to finally head down to Charlotte and to IKEA Saturday morning to get a futon and some other household goodies. While we were there, we also “stumbled” into a fun gastropub called Flying Saucer with almost 90 beers on tap. Jeff never wanted to leave and if we didn’t have to drive home, I’m not sure he would have! We then spent the rest of the weekend putting together all of that IKEA furniture, which included barely avoiding a trip to the emergency room to stitch up a finger, and watching endless hours of football. Go Niners!
I’ll share one of our finished projects with you tomorrow and hopefully the newly redecorated guest bedroom next week when I have the time to finish it during my next 3 day weekend next weekend. I’m not going to know what to do with myself when I the schedule gets back to normal!
Since it was a 3 day weekend and I’m still getting back into the swing of actually having to work all week, I decided to kick off the weekend with a new cocktail concoction. You all know that I love gin and tonics–they’re pretty much the only mixed drink I ever have–and since we ran out of gin a few months ago, I haven’t been able to have one. Bummer, right?
So after heading to the liquor store (still trying to get used to the fact that you can’t buy hard alcohol in the grocery store!), I headed back home to satiate my gin and “tonic” desire. Since grapefruit is in season, I decided to use one to make a simple syrup to add to the drink. I also could not find decent tonic water anyway (read: no high fructose corn syrup), so I settled for Fever Tree’s Sparkling Lemon Water.
And, of course, since it was Friday, I had to break out my I-don’t-have-to-wear-real-shoes Sock Monkey slippers for the occasion. Perfect, no?
Gin & Sparkling Lemon Grapefruit Cocktail
Makes 1 drink
1 ounce gin
1/4 cup sparkling lemon drink (I use fever tree)
1 grapefruit, chopped (about 1 cup)
1/4 cup sugar
1/4 cup water
Place grapefruit, sugar, and water in a pot over medium heat. Bring to a boil then reduce to a simmer. Continue to cook, stirring often, until the mixture thickens, about 10 minutes.
Using a fine strainer, strain the grapefruit mixture and discard the solids to make the simple syrup.
Place ice, grapefruit simple syrup, gin, and sparkling lemon in a cocktail shaker. Shake continuously until cold, about 1 minute.
Serve chilled and enjoy!
