When Jeff and I were studying abroad in London a few years ago, we took a quick weekend trip to Paris with the rest of our class. One of the nights there, a few of us decided to go out to eat at a local pizza restaurant we had seen while wandering about earlier that day. Since we were only going to be there for two days, none of us really spoke any french and so had to basically guess what we were ordering. When the pizza came out, it had a huge egg cracked and cooked in the center of the pizza. Huh? We were so confused and, I’ll admit, a bit disgusted as well. Egg on pizza? I think we all ended up eating out the center, too grossed out to try.
Fast forward 3 years and egg on pizza? Strange? Not so much. I’ve seen it popping up in lots of restaurants around us and instead of being grossed out, I’m totally for it. I love adding egg to things! Strange how things change, right?
On Monday, I told you about how we had a pizza party last weekend, and we ended up with tons of extra ingredients. Breakfast pizza, anyone? So, a few mornings after, I set out to use the ingredients + my favorite packaged naan in place of pizza dough, for a nice Sunday morning brunch.
At first, I was just going to make a fried egg and place it on the finished pizza but ultimately decided that was cheating and cracked the egg right in the middle of the pizza before placing it in the oven. I set the heat high–500 degrees–and hoped for the best. I began to get a little nervous when 8 minutes into baking the white was still not setting. I couldn’t start over without completely wasting the ingredients, so I just kept checking and hoping for the best. Finally, after 15 minutes in the oven, the white had set and the yolk was still nice and soft and runny, just like I like it–phew!
We ended up having this “breakfast” pizza for brunch, but obviously, it would be great for dinner, or hey, even lunch!
How do you feel about putting eggs on pizza?
1 whole wheat store bought naan
1/2 cup red sauce
3 tablespoons pesto
1/4 tomato, sliced
1/4 bell pepper, sliced
1/4 cup grated mozzarella cheese
basil, for garnish
red pepper flakes
Pre-heat oven to 500 degrees.
Place naan on a baking sheet then spread with both the red sauce and pesto.
Top with mozzarella, tomato and bell pepper.
Crack the egg in the center of the pizza then place in the oven.
Bake until the egg white has set and the yolk remains runny, about 15 minutes.
Top with fresh basil and red pepper flakes and enjoy!
