Happy Monday everyone!
3 more days. Just 3 more days. Then I’ll be on a plane back to California for a much needed 2 week holiday. To say I’m excited is an understatement–its definitely going to be difficult to concentrate this week!
How was your weekend? It seemed to fly by for me. I’ve been fighting a cold for the last week and a half or so, so it was definitely a catch up on sleep weekend + cleaning/packing/last minute Christmas shopping before the week began. I also accidentally ran 4.5 miles on Sunday. On an empty stomach no less. You see, we were at a holiday party Saturday night that might just have gotten a bit too festive, so we decided to take the bus home (Blacksburg has wonderful public transit, even on the weekends!) which gave me the perfect excuse to go on a little, as in less than 3 miles, run and then grab a few things at the store for breakfast before I started working on the to-do list. But, while running along the side of the road, I got a bit distracted by a nice looking trail going in a somewhat close direction to the one I needed to be going, so I figured why not–it would link up to where I needed to go eventually.
Yeah, not so much. I grudgingly had to backtrack to the point where I should have stayed on the road and continued on my merry way. So, long story short, I tried not to faint walking through the grocery store and then went home and helped Jeff finish making breakfast. Which, as it was almost 11:45 at this point, I suppose was more accurately lunch.
Luckily they were worth it, although my poor out of shape legs are not so happy at the moment.
Cheesy Chipotle Breakfast Burritos
Makes 2 burritos
2 medium flour tortillas
1 large red potato, chopped
1/4 red onion, chopped
2 chicken sausages, chopped
1/4 cup pepper jack cheese, grated
1 chipotle in adobo, diced
2 ounces goat cheese
2 green onions, chopped
Heat oil in a frying pan over medium heat.
Add potatoes, red onion, and sausage and cook until potatoes soften and sausage is cooked all the way through, about 5-6 minutes. Mix in chipotle pepper.
In a small bowl, scramble eggs and then add to frying pan, stirring constantly to incorporate. Once the eggs are cooked, top with cheese.
Warm tortillas and then assemble by spreading half of the goat cheese and the egg/sausage/potato mixture. Top with green onions and salsa, then roll to form burrito.
