If you’re reading this, Jeff and I are again on our way back to Virginia after a quick but much needed trip back to California to celebrate the lives of those we lost. Unfortunately, we weren’t able to stay for Thanksgiving since I have to work most of this week, but we will be heading to D.C. instead to celebrate with my father-in-law for the first time and explore the city for the weekend which I am beyond excited about.
Growing up, I never really understood the big deal about Thanksgiving, but now, it has slowly grown to be one of my favorite holidays of the year. I love the fall colors and fall decorating–browns, oranges, reds, natural elements–and the focus on family and great food. Which, though not always, is quite a contrast to the sometimes overly stimulated and gift-centric Christmas. Don’t get me wrong though, I love Christmas for many many reason, I just love the simplicity of Thanksgiving and the nature-centric elements.
I still haven’t had the luxury? burden? of cooking Thanksgiving dinner yet, but since we’ll be heading to D.C. this year, I wanted to make a little something to take with us to pitch in and show our appreciation. Somehow, that turned into making cranberry orange relish. The cranberry + orange combo (like in these) just goes so well together that I was excited to make this twist on classic relish.
I very briefly glanced at a recipe before just deciding to jump right in and figure it out. Of course, I thought I’d seen that you were suppose to add 2 cups of sugar and even though I’d only added 3 cups of cranberries, somehow it didn’t quite register that my calculations might just be a touch off. So I hit pulse on the food processor then grabbed my spoon to taste…and almost gagged at the sweetness.
Deeming it unsalvageable, I painfully dumped the first attempt in the trash and headed back to the grocery store for round two. This time, I decided to actually think and slowly added the sugar till I got the desired sweetness. Such a difficult concept, right?
So despite the previous failed attempt, I think this basic citrusy tart + sweet recipe ended up hitting just the right note.
Cranberry Orange Relish
Makes 1 pint
3 cups fresh cranberries
1 orange, zest and juice
1 tablespoon freshly grated ginger
1/4 cup + 1/8 cup sugar
Combine all ingredients in a food processor and pulse on high until the desired consistency is reached.
