Happy Monday everyone!

I hope you all had a wonderful weekend. I have an entire 3 days off, although it still managed to go by way too quickly. Friday was spent working most of the day from home (+ a little shopping thrown in, of course), and then Jeff’s Dad came into town Saturday, so we spent most of the rest of the weekend entertaining (and by entertaining, I mean going here). We also discovered a beautiful trail right down the street from our house which I’ll have to share with you soon!

Like I shared on Friday, the fall color here has really been spectacular. I had been complaining to Jeff a few weeks ago that if this was all the fall color we were going to get, I was moving back to California. Luckily for him, the past week has been stunning, so I guess I’ll stick around for a while! This is the view from the top of the street where we live–gorgeous, right?

Since I essentially had a day off on Friday, I decided to make an unassisted dinner for a nice quiet night in. I still didn’t want to really spend a ton of time in the kitchen, so I created lazy garlic chicken pizza using pre-made naan as pizza crust and rotisserie chicken. I did manage to create my own sauce with roasted garlic (I had such a hard time adding this to the sauce and not just eating the entire thing off of the fork) and probably the most successful roux I’ve ever made. Usually, I struggle to get the flour taste out of my roux before the entire thing turns into a lumpy, burnt mess, but this time, I really focused on whisking the entire time and adding quite a bit some half and half to create a thick, creamy, non-floury sauce.

Once the sauce was made, I simply assembled the pizza with the chicken, mozzarella, red onion slices, sauce, and a few imaginary tomatoes–I’m not good at grocery shopping without a list!

The naan tastes surprisingly like pizza dough, especially once it’s baked, and with a little kale salad on the side, it was the perfect kick-off to a 3 day weekend (and hell must have frozen over because Jeff has even decided he likes kale salad now!).

Garlic Chicken Pizza on Naan

Makes 2 personal size pizzas

Ingredients:

1 head garlic

2 pieces naan

1 breast rotisserie chicken, chopped

1/4 red onion, sliced

2 tablespoons butter

2 tablespoons flour

1/4-1/2 cup half and half

1/2 cup mozzarella cheese

1 small tomato, chopped

olive oil

Steps:

Pre-heat oven to 400 degrees.

Trim top of garlic and place in aluminum foil. Drizzle with olive oil, wrap tightly, and place in oven. Roast until garlic is soft, about 1 hour.

Once garlic is almost roasted, melt butter in a saute pan over medium heat. Slowly add flour, whisking constantly until combined.

Slowly add half and half, adding enough to create a thicker sauce texture without becoming too runny.

Carefully, squeeze roasted garlic into the sauce and stir to combine.

Assemble pizzas by spreading sauce evenly on each piece of naan, then top with chicken, red onion, tomato, and cheese.

Place in oven and bake until crust is golden brown, about 10-15 minutes.
