Happy labor day everyone!
I hope you’re lucky enough to be enjoying a 3-day weekend, so I can at the very least live vicariously through you!
Today’s also the Virginia Tech football season kick-off, which unfortunately, I won’t be going to, but I’m still looking forward to soaking up all of the hype and excitement buzzing around town. They take their football seriously around here! As a grad student, Jeff can put his name in the lottery every week for a chance at getting a cheap student ticket but as his non-student wife, I would sadly have to pay full price even if he got a ticket, which hopefully by next year we’ll be able to afford to do. But still, kinda lame.
The weather was really cooling off last week, and I was thinking we might be getting an early fall, but alas, it’s been in the 90s and crazy humid this past weekend. September’s always a tricky month like that, pretending it’s the start of fall, when really, it’s still just as hot as the summer months. Trickster. Despite the heat, I am starting to get excited for boots and jeans and pretty trees and soups and grilled cheese and apples and all that wonderfulness that comes along with it.
Till then, we’ll have to make do with a last few summery recipes, like today’s smoothie.
On Friday, I told you about my new favorite froyo: Oikos Honey Frozen Greek Yogurt. Since this froyo actually really is just frozen greek yogurt, it’s perfect for smoothies (if you can manage to save it for breakfast instead of eating it all for dessert!).
I’ve been out of my beloved superfood for awhile, and as a result, my smoothies have been lacking a little substance, so I wanted to add something that would really give it some staying power: peanut butter. Plus, there’s something that just feels a little rebellious about adding peanut butter to a fruit smoothie.
For fruit, I went with the classic strawberry + banana combo,
Plus a little almond milk for good measure.

Honey, PB & Strawberry Banana Smoothie
1 tablespoon peanut butter
1/2 cup strawberries, quartered
1/4 cup oikos frozen honey greek yogurt
1 cup plain almond milk
3-4 ice cubes
Combine all ingredients in blender and blend on high until completely mixed, about 1 minute.
Time: 5 minutes
