This sandwich is what happens when your husband leaves you to go out with some new found school friends, and what you were going to make for dinner seems like way too much effort for one person. And when you go to look in your fridge, you realize you just have a really random assortment of things left. I think I’ll be hitting up the grocery store today!
But then, this sandwich, though a bit modest and simple, turns out to be exactly what you needed and ends up being one of the tastiest things you’ve eaten in awhile. Funny how that works.
Now that I’ve finally learned how to make one, poached eggs have kinda taken over my life. I mean, why go through all the trouble of trying to fry the perfect dipping (over easy?) egg when all you have to do is crack an egg into simmering water and wait. So much easier than the alternative, plus, you can avoid all the extra butter that’s oh so necessary with a fried egg (like in this…yum).
While the egg poached, I simply placed a nice slice of sprouted wheat bread topped with garlic hummus and havarti cheese in the broiler, so it got all toasted and melty. I love love love havarti cheese. Whenever it’s in the fridge, I tear off pieces of it like it’s candy. Creamy, melt in your mouth, candy.

I also sauteed some onion and garlic to add to the top of the cheesy bread, then added the egg, and topped it all off with some fresh farmer’s market basil for an extra special touch, red pepper flakes, black pepper, salt, and a teeny swirl of olive oil.
All in all, this sandwich took about 10 minutes to make, but managed to leave a kitchen full of dirty dishes. Doesn’t that always seem like it’s the case?
A quick, protein-filled vegetarian dinner–I guess I should thank Jeff for going out!
Open Faced Hummus & Egg Sandwich
Serves 1
Ingredients:
1 slice sprouted wheat bread
1 egg, poached
1 tablespoon garlic hummus
1/2 ounce havarti cheese
1/4 cup yellow onion, diced
1 clove garlic, diced
3-4 leaves basil, julienned
Red pepper flakes, to taste
Black pepper, to taste
Salt, to taste
Olive oil
Steps:
While your egg poaches, heat olive oil in a small pan. Add onions and garlic and saute until the two begin to brown a bit, about 4-5 minutes.
Spread hummus on bread, top with cheese, and place in the broiler (or toaster oven) until the cheese melts, about 3-4 minutes.
Top bread with onions and garlic and then carefully place poached egg on top, taking care to remove excess water with a towel.
Add basil, red pepper flakes, black pepper, salt, and a swirl of olive oil.
