It’s hard not to take advantage of all of the wonderfully diverse fruit available during the summer. I think even Jeff cuts back on his cookie consumption and has fruit for dessert!
Earlier this week, we had a little going away party for Jeff and myself (more on that tomorrow!), and we wanted to make a quick sweet side to snack on. Whole Foods has a great farmer’s market Tuesday mornings, so while I took the dog for a walk, my mom went and grabbed some suncrest peaches and fresh organic blackberries–yum!
When a fruit is at the height of the season, I don’t really like altering the flavor with too much added sugar or doughy crust–just a simple sauce or grilling will serve just fine. For this salad, we decided to add a simple tart dressing with lemon, mint, and just a touch of sugar to compliment the natural sweet/tart combo of the peaches and blackberries.
It was definitely a hit at the party–this only serves about 4-5, so we probably should have doubled recipe, especially since I think I ate half of the fruit while I was making it! The salad would also be a perfect compliment to a little frozen greek yogurt (this is my favorite!) or heck, maybe even in a tart crust if you’re craving something a little heartier.

Peach & Blackberry Salad w/ Lemony Mint Dressing
Serves 4-5
Ingredients:
2 large suncrest peaches, peeled and sliced
1.5 cups blackberries
2 tablespoons fresh mint
2 tablespoons sugar
3/4 lemon, juiced
Steps:
Combine peaches and blackberries in a large bowl.
In a separate bowl, add lemon juice, sugar, and mint. Muddle the mint until it becomes fragrant but not over processed.
Add the lemony mint dressing to the fruit and gently combine.
Serve immediately, or refrigerate for 2-3 days.
