Men love barbecuing. I think it’s just a fact of life. I mean, my dad even barbecues a Thanksgiving turkey every year–that’s dedication! And still, I don’t know what makes it so much more exciting than regular cooking. The fire? Being outside? The big, manly cooking tools? The mandatory beer? Whatever it is, I know just mentioning the word barbecue to Jeff is a way to get him to make dinner!
So, with the barbecue trick up my sleeve, I somehow managed to steer Jeff away from the frozen chicken nuggets and turkey corn dogs with the lure of barbecuing during our final Trader Joe’s grocery shopping trip last weekend. I even let him get chicken thighs instead of the usual chicken breasts–aren’t I a good wife?
We were simply going to have barbecued chicken and salad until we spotted the most adorable mini hamburger buns and decided on the spot that sliders were the way to go. Thanks Trader Joe’s!
For Jeff, sliders are a bit annoying because he has to eat 4 or 5 to equal his normal sandwich size, but for me who can never can finish an entire burger or sandwich, they’re perfect!
Plus, shrink anything down to miniature size and I’m hooked–what can I say, I’m a girl!
We also made some quick coleslaw with shredded cabbage, radishes, red onion, and mayo to go on top. I wanted to add a few pickles and a little cheese, but Jeff swears that chicken sliders can only have chicken + coleslaw. Go figure.
The barbecue is definitely getting good use before it gets shipped off to the east coast!
Barbecue Chicken Sliders
Makes 8 sliders
1/4 red onion, chopped
1/2 cup radishes, finely sliced
1 cup shredded green cabbage
2 tablespoons mayonnaise
2 1/2 teaspoons salt
2 1/2 teaspoons pepper
4-5 chicken thighs
2 tablespoons smoked paprika
2 teaspoons garlic powder
1 cup barbecue sauce + more for sandwiches
8 mini hamburger buns
In a medium bowl, combine mayo, cabbage, red onion, radishes, and 1/2 teaspoon of the salt and 1/2 teaspoon of the pepper to make coleslaw. Mix until combined, cover, and refrigerate for about 20-30 minutes.
Combine smoked paprika, garlic powder, and the remaining salt and pepper in a small bowl to form a spice rub for the chicken. Rub the spices on the chicken until completely covered.
Place chicken on grill and coat each side with barbecue sauce. Grill until cooked all the way through, about 5 minutes per side.
When the chicken is almost done, toast hamburger buns on the grill.
Remove chicken and cut into 8 pieces to fit your mini hamburger buns.
Assemble sliders by placing a piece of chicken on each bun and topping with a bit more barbecue sauce and the coleslaw.
Serve immediately, and enjoy!
