I’ve always been a bit obsessed with french bread pizza, although I’ve probably never actually had it more than a handful of times. But, oh, the lure of those frozen scrumptiously yet greasy looking ones in the grocery store! Until you look at the back of the back that is, and notice the ridiculously high calorie + fat content, not to mention the artificial ingredients.
So when I do give into my french bread pizza desires, homemade is the way to go. It’s flavorful yet pretty much one of the easiest meals you can throw together in a short amount of time. Plus, depending on the ingredients, it’s pretty darn kid friendly too!
This version is a take on one of my favorite pizzas: the greek feta. Instead of pizza dough or even regular french bread for that matter, we picked up a loaf of kalamata olive bread at Trader Joe’s. It was about the same consistency as french bread, but with just the added special flavor I wanted for the pizza. (Side note: there’s no TJ’s where we’re moving in VA…tear.)
Next, we added some of my favorite pizza toppings: pesto, kalamata olives, artichoke hearts, feta cheese, tomatoes, basil, and a little lemon juice.

Spread pesto evenly on both slices then add feta cheese, olives, artichokes, and tomatoes.

Remove and top with basil. Return to oven for another 1-2 minutes then remove and top with lemon juice.
Enjoy!
