I have a hard time resisting pizza when I go out to eat. Especially fun, creative pizza like we had the other night at Creeky Tiki in downtown SLO. You see, Friday nights have turned into “happy hour” nights in our household. I usually head straight to the gym when I get home from work, and Jeff sometimes gets a little annoyed that that means we miss all of the great happy hour opportunities in this town. So to compromise, I promised him that I would forgo the gym on Fridays and head straight downtown with him in search of the best food and deals in town. Although, I must admit, it’s not the biggest¬†sacrifice to have to eat and drink yummy things instead of sweating in spin class!

A few weekends ago, we had an absolutely gorgeous and warm Friday evening. I thought it would be a waste to spend it inside some dark, air-conditioned bar, so we headed over to one of the best casual outdoor bars in SLO–Creeky Tiki–for a few margaritas. And like usual, a few drinks led to a bit of food and we ended up eating an utterly delicious southwestern pizza.

Then, a few days later, we set out to recreate the meal with the ingredients in our own kitchen.

Be warned, this pizza is utter indulgence. Marinera sauce? Ranch. Mozzarella cheese? Cheddar and pepper jack. Meat? Homemade Carnitas. Other “meat”? Homemade refried black beans. Then, to balance out the richness of those ingredients, we topped the pizza with some fresh green onions, cherry tomatoes, jalapenos, and cilantro.

It would be great with a little fresh salsa to dip it in!

Southwestern Carnitas Pizza

Serves 4

1 plain fresh pizza dough (we used trader joe’s)

1/2 cup ranch dressing

1/2 cup pepper jack cheese

1/4 cup cheddar cheese

1/2 cup carnitas

1/4 cup homemade refried beans

1 jalapeno, sliced

1/2 cup cherry tomatoes, sliced in half

1/4 red onion, sliced

1 green onion, chopped

3-4 sprigs cilantro


Pre-heat oven to 450 degrees.

Roll out pizza dough.

Evenly spread ranch on pizza dough then top with cheeses. Add jalapeno slices.

Add chunks of Carnitas and black beans evenly throughout the pizza, then top with cherry tomatoes and red onion.

Bake for 25-35 minutes, until crust is golden brown.

Remove from oven and top with green onions and cilantro.


Time: 45 minutes
