Although I make smoothies nearly every morning year round, I rarely switch up what I put in them. What can I say, I like consistency! But, with all of the fruit suddenly available everywhere (I guess that does tend to happen in Spring!), it seems a shame not to take advantage of it. So lately, in a rare bit of experimentation, I’ve been adding grapefruit, kumquats, berries, and pretty much anything that comes in my CSA box in my daily smoothie.
Along with using different fruit, I’ve starting adding grated ginger into my smoothies. I just love the flavor it adds, not to mention the nutritional punch! (On a side note, keeping ginger in the freezer not only extends its shelf life but makes it a lot easier to grate too!)
This smoothie is my favorite ginger inspired smoothie so far. With my recent obsession with changing up the fruit in my smoothies, some of the ingredients tend to get lost in the process, especially the ginger. So last weekend, I set out to make the best balance of fruit and ginger I could.
I totally and completely fell in love with this pineapple ginger combination. Frozen pineapple can be so expensive, so I just bought a whole one and cut in up into chunks to freeze on my own. I was able to get about 2 weeks worth of frozen pineapple for $3! Most of the time, I just add almond milk to my smoothies, but when I’m craving something a little sweeter, there’s nothing like a little orange juice.
To complete the smoothie, I also added my favorite greek yogurt and a little bit of flax.

Pineapple Ginger Smoothie
Makes one 16oz smoothie
1 cup frozen pineapple chunks
1 tablespoon grated ginger
1/2 cup non-fat plain Greek yogurt
1/2 teaspoon flaxseed
1 cup orange juice
3/4 cup regular, unsweetened almond milk
Combine all ingredients in a blender and blend until smooth.
Serve immediately, and enjoy!
