Apparently I’m married to a 1o year old. When I was thinking about what to make Jeff for his birthday this year, I immediately had the perfect idea: funfetti cupcakes. I mentioned before that our favorite frozen yogurt topping used to be rainbow sprinkles and for Jeff, that love for rainbow sprinkles has never dimmed.
I could have gone the easy way out and just purchased the box mix. I was even tempted to when I went to the grocery at 8pm the night before his birthday to pick up a few ingredients. But one look at the ingredient list and I was back on track–there should not be so many impossible to pronounce ingredients in one cake!
I ended up borrowing the actual cupcake recipe from a blog called How Sweet It Is and modified it to meet my needs. You can check out the recipe here. The consistency was great but next time, I think I’ll add a touch more sugar to sweeten them up. These are supposed to be funfetti cupcakes after all! Also, it was so hard not to over mix the batter and blend the sprinkle colors–at least mine stopped at pink and didn’t enter the grey zone!
I then hit up another blog–Savory Sweet Life–for a vanilla buttercream recipe which was one of the best homemade frosting recipes I’ve ever come across.
After frosting, I finished the cupcakes my shaking almost an entire container of rainbow sprinkles on top of them for decoration. You can never have enough sprinkles!
Did you know you can also make funfetti cupcakes using the box mix? My friend introduced that lovely creation to me in high school and they are utterly amazing. Just don’t be tempted to look at the ingredient list!
