The cooking mood has definitely shifted in our household. Move over homemade pasta and other labor intensive meals and enter meals like yesterday’s quick & easy pasta and today’s quick and easy recipe–5 minute taco salad. I really love messing up the kitchen with a 2 hour labor of love cooking session, but seriously, who has time for that most days? To me, it’s all about balance. If I’m going to make a dinner that takes a little more time one night, I probably will want something faster the next. And when I do put in all of that effort, I want leftovers. Lots and lots of leftovers. Honestly, our weekly CSA box is the thing that keeps me innovative and from sitting on the couch and eating bean and cheese burritos every night (can I please?). I hate throwing out old veggies that don’t get used quickly enough, so the drive to use everything keeps me going. Plus, it forces me to eat salad pretty much every night which is far from a bad thing!
Which brings us to today’s recipe–taco salad! This taco salad is totally vegetarian because, like always, I’m a bit obsessed with my beans. Throw in some radishes, green onion, feta, jalapenos, tortilla chips, and romaine and you’ve got yourself dinner! The salad dressing for this is a total cheat: salsa + ranch = good to go! I’ve searched high and low for a good store bought taco salad dressing, but nothing seems to compare to this semi-homemade concoction. Also, this is perfect if you have a few almost-stale tortilla chips lying around because they get a bit soggy once you mix them in with the dressing anyway!
And I should note that even my hearty-meal-meat-loving husband loves this as a main course!
5 Minute Taco Salad
1/2 can black beans, rinsed
2 radishes, sliced and quartered
4 large leaves romaine, chopped
1 green onion, chopped
2 jalapenos, chopped
2 tablespoons feta cheese
1 cup crumbled tortilla chips
2 tablespoons salsa
3 tablespoons ranch dressing
In a small bowl, combine salsa and ranch.
Combine the remaining ingredients in a separate bowl.
Add dressing, and enjoy!
